Seyekrad’s Corn and Bacon Fritters, with Ketchup of Fear

Corn and bacon fritters

Conniving and deceitful, this man would rather walk in the shadows than among the light.  He cares little for pretense and has no time for sob stories. A man of acquired power, Seyekrad uses his position to get what he wants, and he doesn’t care who he hurts in the process.  He is tall and slender with shoulder-length white hair and eyes as piercing blue-green as jade. He prefers his dishes served cold with a hint of fear.

These innocent looking Corn and Bacon Fritters are eaten cold, just how Seyekrad likes things, but beware of the ketchup.

This recipe is part of the series of Fallhollow Recipes I have created with author J.Keller-Ford for characters in her new book In The Shadow of the Dragon King, to be published in summer 2016. WHAT YOU NEED

Fritter ingredients

For the fritters:

– 2 cups corn, cooked
– 4 to 6 slices of bacon, cooked and finely chopped
– 3 large eggs, beaten
– Generous 1/2 cup grated strong cheddar
– 1/4 cup flour
– 1/2 teaspoon dried mixed herbs
– Freshly ground black pepper to taste (you don’t need salt because the bacon and strong cheddar brings enough saltiness)
– Oil for cooking

For the ketchup:

– 1 can chopped tomatoes (400g/14oz)
– 1 tablespoon tomato puree
– 3 garlic cloves, crushed
– AT LEAST 1 tablespoon hot pepper sauce
– 2 tablespoons vinegar
– 2 tablespoons dark brown sugar
– 1/2 teaspoon salt

WHAT YOU DO:

1) Apart from the egg and oil, mix all the fritter ingredients together until everything is well coated in the flour, then mix in the egg.

2) Cook them in small batches. Heat oil in shallow frying pan, and drop three large spoonfuls of the mixture into it, don’t worry about making a perfect shape.

3) Leave them cooking on a low to medium heat until the egg looks set through, then flip over, keep cooking until they are a golden brown on both sides. Drain them on kitchen paper and cook the rest.  You should end up with about 9 fritters.

4) To make the ketchup, put all the ketchup ingredients in a pan, mix and heat to a simmer, continue simmering gently for about 20 minutes, don’t let it boil vigorously. Stir regularly and using the spoon to break down the pieces of tomato as much as possible so that it is fairly smooth by the end of cooking.

5) Pass the sauce through a sieve. Take your time with this to push as much through as you can, discard anything that you can’t get through the sieve.

6) The ketchup will probably still be a bit too watery at this stage, so return it to the pan, and continue simmering, stirring continuously, until it has reduced to a thicker ketchup consistency.

7) Now taste it. Depending on the type of hot pepper sauce you have used, it may or may not blow your socks off, if it doesn’t, then add more, remember you’re creating a ketchup of fear, so don’t be shy the the hot sauce!

8) Chill the fritters and ketchup, and serve cold.
