Cherry Chocolatey Sort Of Fudgey-Like Rocky Road Type Squares

Cherry chocolate fudge squares

Do you like the catchy name I gave these? I couldn’t really call them fudge as they’re chewier than you would expect for fudge. I know they look huge on my picture but they’re actually just one inch sized pieces. These are extremely easy and quick to make, and only take an hour to set, so they’re great if you want to whip up a last-minute batch of something to take as a gift to someone.

WHAT YOU NEED:

  • 400g chocolate, dark or milk, your choice, broken into small pieces
  • 397g can condensed milk
  • 25g butter
  • 100g icing sugar
  • 75g mini marshmallows
  • Glace/candied cherries, cut in half. Plus any other decorations of your choice (I used some chocolate strands, but you could use chopped nuts, or shredded coconut, or something else)

WHAT YOU DO:

  1. Put the chocolate, condensed milk, and butter into a pan on a low heat, and stir until completely melted and smooth.
  2. Sift the icing sugar on to it and mix in well.
  3. Stir in the marshmallows, keep stirring until they start to melt, and then stir a little longer, but don’t fully incorporate them, you want to still see the pieces of marshmallow.
  4. Tip into a tin lined with baking/wax paper, and spread out.
  5. Top with the cherry halves (spacing them with thought to one half being in the middle of each square when you cut them), and sprinkle on your other topping.
  6. Chill in the fridge for an hour (more is fine too), then cut into squares. Best stored in an airtight container in the fridge because they will start to stick together if left at room temperature.

Notes:

– After you’ve stirred in the marshmallows, you need to work fairly quickly to spread it in the tin and put the toppings on because it will start to set, and then the sprinkles won’t stick.

– Once you’ve got this basic simple recipe, you can easily add to it by stirring different things into the mixture, such as raisins, nuts, broken up biscuits, even popcorn.
