Oh So Simple Brownies

Anybody who bakes regularly will probably have a favourite Brownie recipe. This is mine, mainly because it’s so quick and easy to make, and they come out just how I like them – the top is slightly crispy, and the middle is both light and chewy at the same time.

WHAT YOU NEED:

– 150g butter
– 1 cup sugar (white or brown sugar, doesn’t make a huge difference)
– 2 eggs
– 1/2 cup plain white flour
– 1/2 cup cocoa powder (Or you can use drinking chocolate powder and then reduce the sugar by 1/4 cup)

WHAT YOU DO:

1) Preheat oven to 180C, 350F.
2) Place butter and sugar in a bowl and mix with an electric whisk until pale and fluffy.
3) Beat the eggs in one at a time on a lower speed setting until well combined.
4) Sieve the cocoa and flour into the bowl and fold it in.
5) Pour into a tin approximately 20cm x 20cm (I line my tin with greaseproof paper first).
6) Bake for approx 30 mins.
7) Cool slightly and then cut into squares. Serve warm or cold.

Of course you can add chocolate chips or walnuts to the mix, and you can frost the brownies, and serve them with whipped cream or ice-cream, if that’s what you like. But I like them just simply as they are.

    • Yep! With this recipe the only place they can go wrong is in the cooking time, I always find that a bit hard to judge with brownies myself, don’t want them too overdone and cakey, but don’t want the raw either!

      • I’ve already made these once, and they turned out really well. I like the substitution of the hot cocoa, because I always seem to have packets of that scattered around in my cupboards. 🙂

        I added raisins to these brownies, as they’re a favorite of my dad, who I’m traveling to see this week. I’m sure he’ll enjoy these brownies just as much as I’ve done!

  1. Brownies have to be “just right” for me. And you’re so right about the biggest problem people have with making them—the cooking time. Just a minute too long can make them hard as a rock! I can’t eat them like I used to do, but I did love them frosted and with nuts (both, not just one or the other!) or with caramel drizzled into them. Double yummy!

    • I’m not too keen on nuts in them myself, I’d choose chocolate chips if anything! But really, if the consistency of them is just right, then I prefer plain rather than having anything to detract from their deliciousness!

  2. Oh no. I sit here tonight with my first tooth ache in more than 20 years. It’s been 7 years and no pain since my last dentist visit and that was all clear. A suspicious hole found recently led to an appointment a few weeks ago. 4 fillings later and my teeth and wallet are hurting. I want brownies, but… ARGH!!!

  3. Love brownies, especially if they’re chewy on the inside. I also like them slightly gooey, so I don’t usually bake them the full amount of time most recipes recommend. Salmonella? What? 😉

    • I like them chewy and gooey too, otherwise what’s the point? It’s just cake! I reckon even in gooey ones, the eggs must be cooked at least as much as having eggs cooked easy, or soft boiled eggs, so we’re good! 🙂
